Apple-Cranberry Chutney
10 fresh apples, peeled, cored and diced into small pieces.
2 cups fresh cranberries
2 tablespoons finely grated ginger
1 medium onion, diced
1 orange, zest and juice
½ cup apple cider vinegar
½ cup brown sugar
1 cinnamon stick
Combine sugar and vinegar in a heavy-bottomed saucepan. Cook on high heat, stirring until the sugar is dissolved and the mixture thickens a bit, about 3 minutes.
Add ginger, orange zest and onions-cook for a minute or two and then add apples and orange juice. Continue cooking on high heat for about 10 minutes. Add cranberries and cinnamon. Reduce heat to a simmer and continue to cook for about 20-30 minutes (the cranberries should all pop and the liquid should reduce). Stir frequently to prevent sticking and burning.
